17.3 ounce package frozen puff pastry, thawed
1 egg
1/4 c milk
1 – 2 T coarse or granulated sugar
1/4 c flour
1 c milk
1 c butter, soft
1 c sugar
1 t vanilla extract
1/2 t almond extract
1/4 t salt
Cut each pastry sheet at creases, forming 3 strips. Cut each strip widthwise into 7 pieces.
Combine egg and milk; lightly brush egg mixture on pastry; sprinkle with sugar. Place on lightly greased baking sheets. Bake at 400 degrees for 10-12 minutes or until golden brown. Cool on a wire rack. Slice in half to form a top and a bottom.
In a saucepan, whisk together flour and milk; bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Cool.
Pour flour mixture into a bowl; beat in butter, sugar, vanilla, almond extract and salt until light and fluffy, about 10 minutes. Spread 1 T on bottom half of each pastry; replace tops.
Store in refrigerator. Yield: about 3-1/2 dozen.
