Fried Ice Cream Dessert
Ingredients:
- margarine, melted - 3/4 c
- brown sugar - 1 1/2 cups
- coconut - 3/4 cup
- chopped nuts - 3/4 cup
- crushed corn flakes - 4 cups
- ice cream - 1/2 gallon
Instructions:
Melt margarine in a large skillet over medium high heat, add brown sugar. Stir and continue cooking until mixture starts to bubble (about 2 - 3 minutes). Add cornflakes and continue cooking, stir constantly, for 5 - 6 minutes or until the cornflakes are slightly caramelized and browned. DO NOT cook too long the sugar will burn. Stir in coconut and nuts. Press half of the mixture in a 13 x 9 inch pan, cover with ice cream, top with remaining corn flake mixture. Cover and place in the freezer for 4 hours or so. To serve, place slices on serving plates, drizzle honey, chocolate or caramel syrup over slice and top with a dollop of whipped cream and a maraschino cherry.
