Frozen Mocha Bars
Ingredients:
- chocolate wafer cookies - 1 package (9 ounces)
- ground cinnamon - 1 t
- margarine, melted - 4 T
- coffee ice cream, softened - 1 quart
- vanilla ice cream, softened - 1 quart
Instructions:
In food processor, pulse cookies and cinnamon until very finely ground, drizzle in butter until blended. Evenly press 1 c cookie mixture into 9 x 9 inch pan. Place in freezer for 15 minutes to firm crust.
Spoon coffee ice cream over cookie crust. Place plastic wrap on ice cream; press down to evenly spread ice cream. Remove plastic wrap. Sprinkle remaining crumb mixture over ice cream, place pan in freezer for 15 minutes. Spoon vanilla ice cream over crumb layer. Place plastic wrap on ice cream and evenly spread ice cream; remove plastic wrap. Cover pan and freeze 6 hours, until firm. To serve, let stand at room temperature for 10 minutes for easier slicing. Cut into squares.
