Gingerbread Trifle
Ingredients:
- gingerbread mix - 1 package
- mandarin orange sections - 2 large cans
- sugar - 1 1/2 T
- cinnamon - 1/2 tsp
- cream cheese, softened - 8 ounces
- heavy cream - 1 pint
- egg yolks - 2
- powdered sugar - 3/4 cup
- rum - 1 1/2 T
- grated nutmeg - 1/2 tsp
- canidied oranges and fresh mint leaves - garnish
Instructions:
Bake gingerbread per package directions, cool; set aside. (For extra moisture, add one cup sour cream to ginerbread mix.)
Drain mandarin oranges, place in a bowl, gently stir in sugar and cinnamon. In a bowl, whip cream cheese until soft, add cream, yolks, powdered sugar and rum. Mix until cream mixture can hold a peak.
Cut or tear gingerbread into 2 inch pieces. Line the bottom of a trifle dish with a layer of gingerbread. Apply pressure to the FIRST layer to create a smooth surface. Add a layer of orange sections, a layer of the cream mixture. (Keep the layers as flat as possible.) Layer of oranges. Layer of gingerbread. Finish with a layer of cream. Garnish with candied oranges and fresh mint leaves.
