Grasshopper Parfaits
Ingredients:
- chocolate instant pudding - 1 small box
- cold milk - 2 cups
- heavy whipping cream - 2 cups
- powdered sugar - 1/4 cup
- mint extract - 1/4 tsp
- green food coloring - 5 drops
- dark chocolate chocolate chips with mint filling, divided - 1 1/3 cup
- chocolate sandwich cookies, crushed - 12
Instructions:
Prepare chocolate pudding with 2 cups milk, per package directions, DO NOT allow to set up. Place half of the pudding in four glasses. Place in refrigerator, briefly, while preparing the mint fluff.
Mint Fluff -- with mixer on high, beat whipping cream just until stiff peaks begin to form. Add mint extract and gently sift in powdered sugar, mix. Fold in 1 cup chocolate chips. Spoon half of the mint fluff over the pudding. Sprinkle crushed cookies over fluff. Spoon the rest of the pudding over the cookies, then add the rest of the mint fluff to each glass. Garnish with 1/3 cup chocolate chips.
