Grilled Pineapple with Rum Caramel Sauce
Ingredients:
- pineapple, peeled, sliced into 1/2 inch thick rounds - 1 fresh
- butter - 3 T
- chopped mint - to desired taste
- Rum Caramel Sauce --
- sugar - 1 cup
- water - 1/3 cup
- salted butter - 8 T
- heavy cream - 1/2 cup
- dark rum - 1/3 cup
Instructions:
Marinate pineapple rounds with melted butter and mint; set aside.
Prepare rum caramel sauce -- in a small pan, dissolve sugar in water over medium high heat. Add butter, boil until it becomes dark brown in color. Remove from heat and whisk in cream, reheat to a slow boil. Cook over low heat for 10 minutes, add rum and cook another 5 minutes until creamy. Remove from heat; set aside.
Grill pineapple over medium high heat for 10 minutes on the first side, flip grill 8 minutes on second side.
Place pineapple slices on individual serving dishes, add a scoop of ice cream, drizzle rum caramel sauce over top.
