Kentucky Derby Pie Bars
Ingredients:
- flour - 2 1/2 cups
- baking soda - 1 t
- salt - 1 t
- water - 2 t
- butter, soft - 1 cup
- sugar - 1/4 cup
- packed brown sugar - 3/4 cup
- vanilla extract - 1 t
- eggs - 2
- chocolate chips - 1 cup
- butter, softened - 3/4 cup
- sugar - 3/4 cup
- eggs - 3
- flour - 3/4 cup
- salt - 1/8 t
- Bourbon - 3 T
- vanilla extract - 1 t
- chocolate chips - 1 1/2 cups
- whole pecans - 1 cup
- water - 1/4 cup
- packed brown sugar - 1/2 cup
- heavy cream - 1/2 cup
- Bourbon - 2 T
- sea salt - 1/2 t
Instructions:
In a bowl, combine flour, baking soda and 1 t salt. In second bowl, beat until creamy 1 cup butter, 1/4 cup sugar, 3/4 cup brown sugar and 1 t vanilla. Add 2 eggs; gradually beat in flour mixture. Add water and beat to combine. Stir in chocolate chips. Spread evenly in a greased 13 x 9 inch baking dish. Bake in a preheated 375 degree oven for 10 - 12 minutes.
While crust is baking prepare filling -- in a bowl cream 3/4 cup butter and 3/4 cup sugar until light and fluffy. Add 3 eggs, flour, 1/8 t salt, 3 T bourbon and 1 t vanilla, continue mixing until well combined. Fold in chocolate chips and pecans. Pour batter over baked crust. Bake at 375 degrees, until filling is set and top is light golden brown, about 45 minutes. If the top starts to get too brown cover with foil. Cool for 30 minutes before cutting.
While bars are cooling prepare sauce-- in a bowl whisk together cream, 2 T bourbon and 1/2 t salt; set aside. In a saucepan, combine 1/2 cup brown sugar and water on medium high heat, bring mixture to a boil. Once it begins to boil watch closely and whisk until mixture starts to turn golden, then to light brown, about 5 - 6 minutes. When it has started to turn brown, slowly pour in cream mixture, whisking constantly and quickly. Continue to heat over medium high until mixture thickens and light caramel color, about 5 minutes. (DO NOT let it get too thick, IT WILL thicken as it sits). Remove from heat.
Place cut bars on serving plate, top with a dollop of ice cream or whipped cream. Drizzle 2 T bourbon sauce over top.
