Lime Cheesecake
Ingredients:
- graham crackers, crushed - 9 whole
- sugar - 1 T
- butter, melted - 6 T
- shredded coconut - 1 1/2 cups
- Cheesecake --
- cream cheese - 8 ounces
- sweetened condensed milk - 14 ounce can
- fresh lime juice - 1/4 cup
- lime zest, vinely chopped - 1 tsp
- sour cream - 3 T
- vanilla extract - 1 tsp
- Toppings --
- whipped cream -
- toasted coconut -
- fresh lime slices - garnish
Instructions:
Prepare crumble -- in a bowl, stir together cracker crumbs and sugar. Pour melted butter over crumbs, stir until crumbs are evenly moistened. Stir in coconut. Spread crumbs onto a rimmed baking sheet.
Bake in a preheated 350 degree oven for 8 - 10 minutes. Completely cool before using. (Can be stored in sealed container up to a week.)
Prepare cheesecake -- in a bowl, beat cream cheese until smooth. While mixing, slowly add condensed milk, mix until smooth. Add lime juice and zest and blend. Add sour cream and vanilla, mix well.
Pour into desired containers, place in refrigerator for at least 3 hours. Before serving, top with whipped cream and toasted coconut. Garnish with lime slices.
