Lime Squares
Ingredients:
- unsalted butter, melted, cooled - 4 T
- ground nuts - 2/3 cup
- graham cracker crumbs - 1 cup
- sugar - 1/4 cup
- grated lime zest - 1 T
- egg yolks - 2
- sweetened condensed milk - 14 ounce can
- fresh lime juice - 1/2 cup
- fresh lemon juice - 2 T
Instructions:
Coat a 8 x 8 inch square baking pan with melted butter. Line pan with parchment paper, leaving a 2 inch overhang on two sides.
Prepare crust -- in a bowl whisk together ground nuts, crumbs, sugar and zest; mix in 4 T butter. Press mixture into bottom and 1 inch up sides of pan. Bake in a preheated 350 degree oven for 8 - 10 minutes, until lightly browned. Cool crust for 30 minutes.
Prepare filling -- in a large bowl, whisk together egg yolks and condensed milk. Whisk in lime juice and lemon juice until smooth. Pour filling evenly into cooled crust. Bake for 15 minutes until set. Remove from oven place pan on wire rack to cool; place in refrigerator for 1 hour before serving. Lift bars from the pan. Cut into 16 bars with a serrated knife. Garnish with lime slices.
