Mini Apple Crisps
Ingredients:
- butter, melted - 1/2 cup
- old fashioned oats - 1 cup
- chopped pecans - 3/4 cup
- flour - 1/2 cup
- brown sugar - 1/2 cup
- salt - 1/4 tsp
- cinnamon - 1/4 tsp
- nutmeg - 1/8 tsp
- Granny Smith apples, peeled, diced - 3 medium
- butter - 1/4 cup
- brown sugar - 3 T
- cinnamon - 1/2 tsp
- whipped cream, ice cream or vanilla yogurt - for serving
Instructions:
Prepare crumble -- in a bowl combine oats, pecans, flour, 1/2 cup brown sugar, salt, 1/4 tsp cinnamon and nutmeg. Pour 1/2 cup melted butter over mixture, stir until well combined. Spread mixture on a baking sheet. Bake in a preheated 350 degree oven for 10 minutes. Set aside to cool.
Prepare cinnamon apples -- in a skillet, over medium low heat, cook apples, 1/4 cup butter, 3 T brown sugar and 1/2 tsp cinnamon, stir often to coat the apples in the sauce, for 5 minutes. Remove from heat and cool a little before assembling the dessert. Add 2 - 3 T oatmeal crumble to the bottom of 6 small dessert dishes, top with cinnamon apples. Add a layer of whipped cream, ice cream OR vanilla yogurt. Sprinkle crumble over top, drizzle any remaining sauce from the pan over the apples. Serve immediately.
