Mini Caramel Apple Crisp Bites
Ingredients:
- graham cracker crumbs - 2 cups
- butter, melted - 12 T
- powdered sugar - 1/2 cup
- apples, peeled, chopped - 4 cups
- sugar - 1/3 cup
- brown sugar - 1/4 cup
- flour - 2 1/4 T
- cinnamon - 1/2 t
- nutmeg - 1/4 t
- caramel topping -
Instructions:
In a bowl, mix together cracker crumbs, powdered sugar and butter with a spoon. Divide mixture into 24 greased mini muffin cups. Press along the bottom and sides. Bake in preheated 350 degree oven for 5 minutes, cool completely. Increase oven temperature to 350 degrees.
In a bowl, mix together apples, sugar, brown sugar, flour, cinnamon and nutmeg. Place in a baking dish, bake at 375 degrees for 15 minutes, until apples are slightly softened. Lower oven temperature to 350 degrees.
Scoop apple mixture into the graham cracker crust cups. (while still in the muffin pan) Sprinkle extra graham cracker on top of the apples.
Bake in a 350 degree oven for 5 minutes. Cool completely, use a knife to loosen from pan. Place on serving plate, drizzle with caramel topping
