Mixed Berry Crumble
Ingredients:
- black berries, blue berries, raspberries, etc - 8 cups mixed
- sugar - 1/3 cup
- cornstarch - 2 T
- flour - 1/2 cup
- old fashioned oats - 1 cup
- salt - 1/2 t
- packed light brown sugar - 3/4 cup
- butter, cut into small pieces - 1/2 cup
- whipping cream - 1 cup
- maple syrup - 2 T
- finely chopped mint - 3 T
Instructions:
In a bowl mix together berries, sugar and cornstarch; set aside. In another bowl combine flour, oats, salt, brown sugar and butter; mix together until you have clumps the size of grapes. Pour berries into a 9 inch round or square baking dish. Sprinkle crumble mixture over top.
Bake in a preheated 325 degree oven for 1 hour and 15 minutes. Let cool for 1 hour before serving. Top with dollops of whipped cream.
Prepare cream -- pour cream in a bowl, beat on high until soft peaks form, 2 - 3 minutes. Add maple syrup and mint and beat for a couple of seconds; serve.
