Oatmeal Peach Cobbler
Ingredients:
- sugar - 1/2 cup
- packed brown sugar - 1/2 cup
- butter, softened - 1/2 cup
- vanilla extract - 2 t
- egg - 1
- flour - 1 cup
- old fashioned oats - 1cup
- baking powder - 1/2 t
- salt - 1/2 t
- peaches, peeled, sliced - 6 cups
- sugar - 2 T
- flour - 1 T
- lemon juice - 1/2 T
Instructions:
In a bowl combine sugar, brown sugar and butter, beat on medium speed until light and fluffy. Add vanilla and egg; beat well. Combine flour, oats, baking powder and salt. Add to sugar mixture beat on low speed until blended. Cover, place refrigerator for 30 minutes.
In a bowl combine peaches, 2 T sugar, 1 T flour and lemon juice. Pour peach mixture into a greased 9 x 9 inch pan. Place spoonful's of oatmeal topping over peaches to completely cover peaches. Bake in a preheated 350 degree oven for 30 - 35 minutes, or until light brown and bubbly.
