20 Oreo cookies (leave 12 whole for the bottom of cupcakes and coarsely chop 8 for the filling)
¾ c powdered sugar
16 ounces cream cheese
2 egg whites
pinch of salt
Place 12 paper liners in a standard size muffin tin and place an Oreo in the bottom of each cup.
In a bowl beat together cream cheese and powdered sugar until smooth. With mixer on medium speed, add eggs whites one at a time and mix until combined. DO NOT over mix.
Add salt and mix. Fold in chopped Oreo.
Pour filling over Oreo in each cup.
Bake at 275 degrees for 20 minutes.
For chocolate ganache, melt 1/2 c semi sweet chocolate chips; stir in 1/4 c heavy cream until combined.
Use a spoon and spread ganache over the cheesecakes and cool completely. Store in refrigerator.
