Peanut Butter Cheesecake Bars
Ingredients:
- Oreo cookies, crushed - 22 (2 1/2 cups)
- butter, softened - 6 T
- cream cheese, softened - 16 ounces
- eggs - 2
- sour cream - 1/2 cup
- sugar - 1/2 cup
- vanilla - 1 1/2 t
- fun size Butterfinger candy bars, chopped - 8
- peanut butter cups - 8
- caramel ice cream topping - 1/2 cup
- semi sweet baking chocolate - 5 ounces
- butter, softened - 1/4 cup
- creamy peanut butter - 1/2 cup
- milk - 1 1/2 T
- powdered sugar - 1 cup
Instructions:
In a bowl, combine Oreos and butter, press into the bottom of a foil lined (have foil hang over the edges of pan) 8 x 8 inch baking pan. Bake in a preheated 350 degree oven for 8 minutes. Remove from oven; set aside to cool.
In a bowl beat cream cheese, eggs, sour cream, sugar and vanilla until smooth and creamy. Spread 1/2 the batter over the Oreo crust. Sprinkle peanut butter cups and Butterfingers evenly over the batter. Drizzle caramel over the candy. Evenly spread cream cheese mixture over candy. Bake at 350 degrees for 45 minutes or until cheesecake has set and edges are lightly browned.
Melt the chocolate and spread evenly over the cheesecake. (When chocolate is partially set score the bars where they will be cut.) Cover, place in refrigerator for 4 hours or overnight. Remove bars from the pan by pulling up on the foil. Cut it into 16 squares.
Prepare topping -- in a bowl, mix 1/4 c butter, peanut butter, milk and powdered sugar until creamy. Pipe a swirl on top of each piece of cheesecake.
