Pecan Cheesecake Pie
Ingredients:
- refrigerated pie crust - 1
- cream cheese - 8 ounces
- sugar - 1/4 cup
- egg - 1
- dark corn syrup - 2/3 cup
- eggs - 2
- sugar - 2/3 cup
- butter, melted - 1 1/2 T
- vanilla - 1/2 t
- pecans - 1 cup
Instructions:
Press pie crust into a 9 inch pie pan, coated with non stick baking spray, crimp edges of pie crust; set aside. In a bowl beat cream cheese and sugar until creamy, add egg and beat. Spread mixture into unbaked pie crust.
Prepare filling -- In a bowl whisk together corn syrup, eggs, sugar, butter and vanilla, stir in pecans. Gently spoon mixture over cheese layer. Cover edges of pie crust with foil to prevent over browning. Bake in preheated 350 degree oven for 50 minutes. Remove, cool completely. Store covered in the refrigerator.
