Pecan Pie Bread Pudding
Ingredients:
- bite size pieces bread - 8 cups
- eggs - 3
- light corn syrup - 1 1/4 cups
- brown sugar - 1/3 cups
- sugar - 1/4 cups
- butter, melted - 2 T
- maple OR vanilla extract - 1 tsp
- salt - 1/2 tsp
- cinnamon - 1 tsp
- pecans, halved or chopped - 1 cups
Instructions:
Place bread in a 8 x 8 inch or 9 x 9 inch baking dish, lined with parchment paper and coated with cooking spray. Pour melted butter over the bread. In a bowl, whisk together eggs, corn syrup, brown sugar, sugar, vanilla, cinnamon and salt. Stir in pecans, pour evenly over bread pieces. Use a rubber spatula and push the bread around the dish until bread is coated with the egg mixture.
Bake in a preheated 375 degree oven for 45 minutes. Serve warm with a dollop of whipped cream.
