Pecan Pie Bread Pudding
Ingredients:
- day old French bread, cubed - 16 ounce loaf
- milk - 2 1/2 cups
- half & half - 1 cup
- eggs, lightly beaten - 4
- sugar - 1 cup
- vanilla extract - 1 T
- salt - 1/8 tsp
- butter, softened - 1/2 cup
- packed brown sugar - 1 1/2 cups
- chopped pecans - 1 cup
Instructions:
Place bread cubes in a large bowl; set aside. In a second bowl, whisk together eggs, milk, half & half, sugar, salt and vanilla; pour over bread. Let sit 5 - 10 minutes.
In another bowl, with a fork combine, butter, brown sugar and pecans. Pour half of the bread mixture into a 8 x 8 inch baking pan. Sprinkle half the pecan mixture, spoon remaining bread mixture over; top with remaining pecan mixture. Slightly press mixture down in pan. (Pan will be really full.)
Place pan on a cookie sheet with a edge to catch any boil over. Bake in a preheated 350 degrees oven for 45 - 55 minutes. Center will slightly wiggle, but will set when cool.
