Pecan Pie Egg Rolls
Ingredients:
- corn syrup - light or dark - 1 cup
- eggs - 3
- sugar - 1 cup
- butter, melted - 2 T
- vanilla extract - 1 t
- pecans - 2 cups
- egg roll wraps - 16
Instructions:
In a bowl, use a spoon, mix together corn syrup, eggs, sugar, butter and vanilla, stir in pecans. Pour filling into pie dish. Bake on the center rack in a preheated 350 degree oven for 60 - 70 minutes. Cool on wire rack for 2 hours.
Place 2 T pecan mixture on each wrap. Roll each wrap, seal edge with water. Heat oil on medium heat, fry 5 - 7 minutes on each side OR bake at 350 degrees for 20 minutes, turn egg rolls over after 10 minutes. If desired serve with ice cream or Cool Whip.
