Phyllo Parfaits
Ingredients:
- butter, melted - 3 T
- phyllo pastry, thawed - 4 sheets
- sugar - 1/3 cup
- toasted, walnuts, chopped - 1 cup
- Greek yogurt, not low fat - 3 cups
- vanilla extract - 1/2 tsp
- honey - 1/2 cup
Instructions:
Brush a rimmed baking sheet with butter. Lay a pastry sheet on the butter, brush with additional butter. Sprinkle 1 T sugar and 1/4 cup nuts over butter. Repeat layering with remaining pastry, butter, sugar and nuts.
Bake in a preheated 375 degree oven for 10 - 15 minutes. Cool completely in the pan on a wire rack.
To serve -- mix together yogurt and vanilla. Break pastry into pieces. In parfait glasses, layer yogurt, honey, phyllo, repeat layer. Serve immediately.
