Pineapple Bread Pudding
Ingredients:
- Hawaiian Sweet Bread, cut into cubes - 1 round loaf
- fresh pineapple, cut into small pieces - 1
- raisins - 1/2 cup
- eggs, slightly beaten - 3
- heavy cream - 1/2 cup
- milk - 1/4 cup
- bacon, cooked, cut into pieces - to desired amount
Instructions:
Place bread cubes in a large bowl. In a saucepan, combine raisins, milk and pineapple, cook until pineapple is soft and starting to fall apart. Add cream and mix well.
Pour mixture over bread cubes, stir, mix in eggs. Pour mixture into a greased casserole dish. Top with bacon.
Bake in a preheated 375 degree oven for 25 - 30 minutes until golden on top. Serves 4
