Pumpkin Cream Cheese Dessert
Ingredients:
- flour - 2 cup
- butter, softened - 1 cup
- chopped walnuts OR pecans, toasted, divided - 3/4 cup
- cream cheese, softened - 8 ounces
- powdered sugar - 1 cup
- Cool Whip, thawed, divided - 2 cups
- milk - 2 1/2 cups
- vanilla instant pudding mix - 3 small boxes
- pumpkin puree - 15 ounce can
- cinnamon - 1 t
- Cool Whip, thawed - 1 cup
Instructions:
In a bowl mix flour, butter and ½ cup walnuts, press into a sprayed 13 x 9 inch baking dish, bake in preheated 350 degree oven for 15 minutes, remove from oven; cool completely. In a bowl mix cream cheese and powdered sugar until light and fluffy, add 1 cup Cool Whip and spread over cooled crust. Place in refrigerator. Prepare pumpkin mixture --
In a bowl mix together milk and vanilla instant pudding mix, add pumpkin and cinnamon and mix until smooth. Spread evenly over cream cheese layer.
Evenly spread 1 cup Cool Whip over top and sprinkle with chopped walnuts. Place in refrigerator for at least 3 hours.
