Pumpkin Fritters
Ingredients:
- pumpkin, cooked and pureed - 1 cup
- flour - 1 cup
- baking powder - 2 t
- caster sugar - 2 T
- egg - 1
- milk - 1/4 cup
- salt - pinch
- oil - for frying
- sugar - 3/4 cup
- cream - 1 cup
- vanilla - 1 t
- butter - 3 T
- golden syrup - 1/2 cup
- sea salt flakes - 1 t
Instructions:
In a bowl combine pumpkin, flour, baking powder, caster sugar, egg, milk and salt, mix until smooth. Heat oil, fry spoonfuls of the batter for 2 - 3 minutes until golden brown and cooked through. Remove from oil, place on paper towels to drain..
Prepare caramel sauce -- in a saucepan combine sugar, cream, vanilla, butter, syrup and sea salt, cook over medium heat for 10 - 15 minutes until sauce is thick and glossy. Pour syrup over fritters and serve.
