Pumpkin Pie Cupcakes
Ingredients:
- pumpkin puree - 15 ounce can
- sugar - 1/2 cup
- brown sugar - 1/4 cup
- eggs - 2
- vanilla extract - 1 t
- evaporated milk - 3/4 cup
- flour - 2/4 cup
- pumpkin pie spice - 2 t
- salt - 1/4 t
- baking powder - 1/4 t
- baking soda - 1/4 t
Instructions:
Mix the pumpkin, sugar, brown sugar, eggs, vanilla and milk. Add remaining ingredients and stir.
Line a 12 cup muffin tin with silicone liners or foil liners sprayed with cooking spray. Fill each muffin cup with 1/3 c of the filling. Bake in a preheated 350 degree oven for 20 minutes and cool for 20 minutes. Remove cupcakes from pan and place in the refrigerator for 30 minutes. Before serving top with whipped cream and sprinkle pumpkin pie spice over top.
