Quick Cheesecakes
Ingredients:
- semi sweet OR bitter sweet chocolate chips, melted - 1/4 cup
- ricotta - 1/2 cup
- chocolate wafer cookies - 12
- raspberry jam or desired flavor - 1 T
Instructions:
In a bowl combine chocolate and ricotta until smooth. Spoon a scant tablespoon of mixture on each wafer; top with 1/4 t jam.
