Rolo Cheesecake
Ingredients:
- graham cracker crumbs - 3 cups
- sugar - 1 cup
- butter, melted - 1 cup
- cream cheese - 2 - 8 ounces packages
- eggs - 2
- sugar - 1cup
- flour - 1/4 cup
- mini rolo candy - 1 package
- butter - 1/2 cup
- chocolate chips - 6 ounces plus more for garnish
- light corn syrup - 4 t
Instructions:
Prepare crust -- stir together graham cracker crumbs, 1 c sugar and 1 c butter, press in a 9 x 13 inch baking pan lined with non stick foil. Bake in a preheated 350 degree oven for 7 - 1- minutes. Cool completely. Prepare filling -- beat together cream cheese, eggs, 1 c sugar and flour until smooth, fold in rolo's. Pour filling over crust, bake for 30 - 35 minutes. Completely cool. Prepare glaze -- melt together 1/2 cup butter and chocolate chips, stir until smooth, stir in corn syrup. Pour evenly over cheesecake. Place in refrigerator overnight. To serve cut into squares, place on serving plate, melt chocolate chips, drizzle chocolate over top of each square, garnish with a rolo on top.
