1 package chocolate cake mix and ingredients to make the cake according to the package
2 lbs ricotta cheese
4 eggs
¾ c sugar
1 t pure vanilla extract
Mix cake mix according to directions on the box. Set aside.
In a bowl beat together ricotta cheese, eggs, sugar and vanilla until smooth.
Pour cake batter into a greased 9×13 inch baking dish. Spread evenly in the pan. Carefully spread the cheese mixture evenly over the top of the cake batter.
(The layers will switch during baking time, cake will be on the top and cheese mixture on the bottom.)
Bake at 350 degrees for 1 hour. Cool completely before frosting.
Frosting –
1 (5.1 oz.) package instant chocolate pudding mix
1 c cold milk
8 ounces Cool Whip
Whisk the pudding mix and milk together. Fold the Cool Whip into the pudding until combined. Spread pudding mixture over cake.
Cover cake and refrigerate at least 6 hours before serving.
