Triple Chocolate Cheesecake
Ingredients:
- chocolate wafer cookies, crushed into fine crumbs - 9 ounces
- margarine, melted - 1/4 cup
- cream cheese - 16 ounces
- sugar - 1/2 cup
- eggs - 3
- dark chocolate chips, melted - 2 cups
- heavy whipping cream - 1 cup
- margarine, melted - 2 T
- vanilla - 3 t
- heavy whipping cream, divided - 1/2 cup
- white chocolate chips - 1/2 cup
- milk chocolate chips - 1/2 cup
Instructions:
Combine crumbs and margarine, press into the bottom and sides of a 9 inch spring form pan. In a bowl beat cream cheese and sugar until smooth, add eggs one at a time, beating after each addition. Add dark chocolate chips, 1 cup cream, 2 T margarine and vanilla; beat until smooth. Pour into crust, let sit at room temperature for 30 minutes. Place pan on a cookie sheet, bake in a preheated 325 degree oven for 60 minutes. Turn oven off, leave oven door ajar and leave cheesecake in the oven for 30 minutes. Remove from oven and run knife around the edge of pan. Remove side of pan, cool to room temperature.
Prepare topping -- In a saucepan, heat 1/4 cup cream until bubbling around the edge. Turn heat off add white chocolate chips, cover and let set for 5 minutes; stir until smooth. With another saucepan repeat process with the milk chocolate chips. Pour white chocolate over cheesecake, drizzle with milk chocolate. (Cover entire top of cheesecake with the chocolate.) Chill overnight before serving.
