Vanilla Bread Pudding with Praline Sauce
Ingredients:
- French bread, torn into pieces - 12 slices
- sugar - 1/2 cup
- cinnamon - 1 tsp
- chopped pecans - 1/2 cup
- eggs - 4
- milk - 2 cups
- French Vanilla instant pudding mix - 1 package
- Praline sauce --
- light brown sugar - 3/4 cup
- butter - 4 T
- evaporated milk - 1 small can
- chopped pecans - 1/2 cup
- 2 T dark rum OR 2 tsp rum extract -
Instructions:
Place bread in a 2 1/2 quart buttered casserole dish.
In large bowl, whisk together sugar, cinnamon, eggs, milk and dry pudding mix; stir in pecans. Pour over bread, stir until evenly coated. Place casserole dish in a larger baking pan, fill baking pan with one inch of water.
Bake in a preheated 350 degree oven for 40 - 45 minutes or until golden brown.
Prepare praline sauce -- in a saucepan, melt butter, add brown sugar, milk and pecans. Bring to a boil, lower heat and simmer for 5 minutes, stir often. Remove from heat, stir in rum OR rum extract.
Serve warm over bread pudding.
