Beer Cheese Dip
Ingredients:
- butter - 1 T
- flour - 2 T
- milk - 1 c
- dry mustard - 1 t
- nutmeg - 1/4 t
- beer - 6 ounces
- sharp cheddar cheese, grated - 3 c
- pepper - to desired taste
Instructions:
In a saucepan melt butter; add flour and stir for 1 minute. Whisk in milk, keep stirring and cook until mixture thickens. When mixture has thickened, pour in beer. Bring to a simmer, stirring constantly. Stir in pepper, nutmeg and mustard powder. Add cheese, a cup at a time, stirring until cheese is melted and incorporated in mixture before adding the next cup. Keep warm and serve immediately with cut up bagels, pretzel bites, etc.
