Buffalo Chicken Beer Cheese Dip
Ingredients:
- olive oil - 2 T
- boneless skinless chicken thighs, cut into small pieces - 3
- sour cream - 8 ounces
- cream cheese, softened - 16 ounces
- Parmesan cheese - 3/4 c
- Mozzarella cheese - 3/4 c plus 1/2 c
- Franks Red Hot Sauce - 1/3 c
- IPA beer, your choice - 2/3 c
- garlic powder - 1 t
- cornstarch - 2 T
- blue cheese crumbles - 1/2 c
Instructions:
In a skillet, heat olive oil over medium high, add chicken and cook through and browned.
In a food processor, add sour cream, cream cheese, Parmesan, 3/4 c Mozzarella, hot sauce, beer, garlic and cornstarch, process until well combined. Pour into baking dish, stir in chicken, sprinkle with 1/2 c Mozzarella.
Bake in preheated 350 degree oven for 15 minutes, until cheese is bubbly. Remove from oven, sprinkle blue cheese over top.
Serve warm with chips, crackers, bagels, etc.
