Hot Vegetable Dip
Ingredients:
- neufchatel cheese, softened - 8 ounces
- shredded Swiss cheese - 1 cup
- mayonnaise - 1 heaping T
- sour cream - 1 heaping T
- fresh dill weed - 1 t
- salt and pepper - to desired taste
- finely chopped broccoli - 1/4 cup
- finely chopped yellow bell pepper - 1/4 cup
- finely chopped red bell pepper - 1/4 cup
- finely chopped sun dried tomatoes - 2 T
- finely chopped yellow onion - 1/4 cup
- finely chopped carrots - 2 T
- Worcestershire sauce - 1 t
- red pepper flakes - 1/8 t
- oil to saute vegetables -
- Swiss cheese for topping - 2 T
Instructions:
Place oil in a skillet, saute all the vegetables, to your desired doneness. Mix in Worcestershire, salt and pepper flakes; set aside.
In a bowl, mix together cheeses, mayonnaise, sour cream, dill weed, salt and pepper. Mix in the vegetables, spread evenly into a greased casserole dish. Sprinkle Swiss cheese over top.
Bake in a preheated 350 degree oven for 15 minutes. Serve warm with any chips, crackers, bagels, baquettes, baked potato, etc.
