Kale Dip
Ingredients:
- extra virgin oil - 1 T
- garlic, thinly sliced - 1 clove
- thinly sliced kale leaves - 3 cups
- corase salt - to desired taste
- cottage cheese - 1 cup
- red pepper flakes - pinch
- fresh lemon juice - 1 T
- sugar snap peas, trimmed - 2 cups
Instructions:
In a pan over medium heat oil, add garlic, kale and salt. Cook, covered, stir occasionally, until tender, 3 - 4 minutes. Completely cool. Place kale mixture and cottage cheese in food processor puree until smooth. Stir in pepper flakes and lemon juice. Cook peas in boiling salt water until bright green and tender, 1 - 2 minutes, drain. Immediately place peas in ice water; drain. Serve with kale dip.
