Spicy Corn Dip
Ingredients:
- corn, roasted, cut off the cob (frozen or canned corn can also be used) - 2- 3 ears, about 2 c
- red onions, diced - 1 c
- sweet red pepper, chopped - 1c
- jalapeno, minced to desired taste - 1
- cloves garlic, minced - 2
- mayonnaise - 1 c
- shredded cheese - 2 c
- salt and pepper - to desired taste
- cayenne pepper - 1 t
Instructions:
Prepare corn. In a skillet add a little oil and saute sweet pepper and onion until softened, add jalapeno and garlic, cook for a couple of minutes. Add mixture to corn, set aside to cool.
In a bowl, mix together mayonnaise, cayenne, salt, pepper and 1/2 half the cheese. Add to corn mixture, stir until blended. Pour into a greased 8 x 8 inch baking dish, cover with remaining cheese. Bake in a preheated 350 degree oven 10 - 12 minutes until bubbly.
Serve with chips, crackers, vegetables, etc.
