Apple Bread Pudding Muffins
Ingredients:
- dried cinnamon bread cubes - 4 cups (8 - 10 slices)
- finely chopped tart apples (don't peel) - 2/3 cup
- eggs, lightly beaten - 3
- whole milk - 2 cups
- butter, melted - 1/4 cup
- sugar - 1/2 cup
- vanilla - 1 1/2 t
- apple pie spice - 1 t
- salt - 1/4 t
- whipping cream - 1/2 cup
- butter - 1/2 cup
- packed brown sugar - 3/4 cup
- light corn syrup - 2 T
- vanilla - 1 t
Instructions:
In a large bowl combine bread cubes and apples.
In a bowl combine eggs, milk, 1/4 cup butter, sugar, 1 1/2 t vanilla, apple pie spice and salt. Stir into bread mixture. Let stand for 10 minutes to allow bread to soak up liquid, stir occasionally. Spoon mixture into (12 greased or 12 foil lined) muffin pan.
Place pan on a baking sheet. Bake in a preheated 350 degree oven for 25 - 30 minutes or until puffed and a knife inserted near centers comes out clean. Transfer muffin pan to a wire rack and cool.
Prepare caramel Sauce -- in a heavy medium saucepan combine cream, 1/2 cup butter, brown sugar and corn syrup. Over medium high heat, bring to a boil, whisking occasionally. Reduce heat, boil gently for 3 minutes. Remove from heat, stir in 1 t vanilla. Let sauce cool for 15 minutes. To serve place muffins on serving plate, pour caramel sauce over top.
