Apple Donuts
Ingredients:
- brown sugar - 1/4 c
- sugar - 1/4 c
- bite size chunks of apple - 1 1/2 c
- flour - 1 1/2 c
- baking powder - 1 3/4 t
- kosher salt - 1/2 t
- nutmeg - 1 t
- cold butter (cut in small pieces) - 1/3 c
- egg, beaten - 1
- milk - 1/4 c
- butter, melted - 1/4 c
- sugar - 1/3 c
- cinnamon - 1 t
Instructions:
In a bowl combine flour, baking powder, sugars, salt and nutmeg. Add butter and cut it in to resemble coarse crumbs.
In a separate bowl, beat the egg, stir in the milk and fold in the chopped apples. Add egg mixture to the flour mixture. Stir with a spatula DO NOT over mix. Place a spoonful of batter into each well of a buttered mini muffin pan.
Bake in a preheated 350 degree oven for 15 - 18 minutes or until the donuts are golden. Remove pan from the oven, remove donuts from pan and lightly brush each donut with melted butter, then roll in sugar-cinnamon mixture.
