Apple Fritters
Ingredients:
- flour - 1 heaping cup
- sugar - 1/3 cup
- baking powder - 1 t
- salt - dash
- cinnamon - 1 - 2 t, to desired taste
- nutmeg - 1/4 t
- vanilla - 1/2 t
- butter, melted - 1 T
- egg - 1
- milk - 1/3 cup plus more if needed
- chopped apple, about the size of peas - 1 - 1 1/2 cup
- oil - for frying
- powdered sugar - 1 cup
- milk - 1 T
Instructions:
In a bowl mix together flour, sugar, baking powder, salt, cinnamon and nutmeg slowly add vanilla, butter, egg and 1/3 cup milk. Gently mix until well combined, DO NOT over beat, fold in apples. The batter should be the consistency of a light cake mix. Heat oil to 365 degrees, place dollops of dough into oil. DO NOT overcrowd, watch carefully when underside turns golden brown, gently flip over and continue frying until done. (Cooking time will vary with the size of fritters.) Drain on paper towel lined plate.
Prepare glaze -- mix together until smooth 1 c powdered sugar and 1 T milk. Dip fritters in glaze or powdered sugar.
