Apple Fritters
Ingredients:
- Granny Smith apple (diced small, sprinkled with fresh lemon juice) - 1 large
- butter - 2 T
- brown sugar - 2 T
- salt - pinch
- ground cinnamon - 1 tsp
- lemon zest - 1 T
- flour - 2 tsp
- Fritter --
- eggs - 2
- flour - 1 1/3 cup
- baking powder - 1 T
- salt - pinch
- sugar - 1/4 cup
- whole milk ricotta cheese - 1 cup
- vanilla extract - 1 tsp
- canola oil - for frying
- cinnamon sugar -
Instructions:
Prepare apple filling -- in a sauté pan, melt the butter. Add apples and mix. Add salt, sugar and cinnamon; stir.
Saute mixture for about 5 minutes till apples are soft. If needed, sprinkle mixture with some flour, stir to thicken. you just don’t want it to be to wet.
Cool, set aside. (apple filling can be prepared a day a head of time)
Prepare fritters -- in a bowl, beat eggs until foamy. With mixer on low speed, add flour, baking powder, salt and sugar, mix. Add cheese and vanilla, mix until combined. DO NOT over mix. (Batter will be thick, creamy and sticky.) Gently fold apple mixture into the batter.
Heat oil to 375 degrees. Spray a small melon ball scoop with oil. Scoop up the batter (no exact measurement here) carefully place batter into the oil. DO NOT let them touch, turn them a few times for even browning, about 3 minutes, (time depends on the fritter size) to a nice deep golden brown. Remove, place on paper towels to drain.
Sprinkle with cinnamon sugar. Serve warm with caramel dip.
