Apple Ring Fritters
Ingredients:
- sugar, divided - 1/2 cup plus 2 T
- cinnamon, divided - 1 1/2 t
- old fashioned oats - 1 cup
- rice flour - 1/2 cup
- cornstarch - 2 T
- baking powder - 1 t
- kosher salt - 3/4 t
- egg - 1
- club soda - 1/2 cup or more
- crisp apples - 2 large
- vegetable oil - for frying
Instructions:
In a shallow bowl whisk together 1/2 cup sugar and 1 t cinnamon; set aside. Peel apples, core with an apple corer, slice into 1/4 inch thick rings.
In a food processor, pulse oats to a coarse powder. In a bowl mix together oats, flour, cornstarch, baking powder, salt, 2 T sugar and 1/2 t cinnamon. Whisk in egg and 1/2 cup club soda, add more soda by the tablespoonful until the consistency of pancake batter. Heat vegetable oil to 375 degrees.
Work in batches and maintain oil temperature, dip apple rings in batter and fry, turning occasionally, until golden brown and crisp, about 4 minutes. Place fritters on a paper towel lined plate; drain briefly, dip in cinnamon sugar mixture.
