Caramel Filled Doughnut Holes
Ingredients:
- flour - 2 1/2 c spooned and leveled plus more for work surface
- cocoa powder - 1 c
- baking powder - 2 t
- baking soda - 1/2 t
- coarse salt - 1 1/2 t
- sugar - 1 c plus more for coating
- buttermilk - 3/4 c
- butter, melted - 4 T
- eggs - 2
- soft caramel squares - 28 - 30
- vegetable oil for frying -
Instructions:
In a bowl sift together flour, cocoa powder, baking powder, baking soda and salt. In another bowl, thoroughly combine sugar, buttermilk, butter and eggs. Stir wet mixture into dry mixture until dough forms.
Pat dough, flat on a floured work area, lightly flour dough. Roll dough to a 1/3 inch thickness. Cut into 2 1/2 inch circles (if needed lift circles with a thin spatula). Combine cut scraps and roll again. Place a caramel in the center of each circle, pinch closed, gently roll into a smooth ball.
Heat oil to 350 degrees on a candy thermometer, fry doughnuts 5 minutes, turning once adjust heat as needed. Place doughnuts on paper towel lined plate; let set for 4 minutes. Place sugar in a bowl and roll doughnuts in the sugar. Serve immediately.
