Chocolate Muffins
Ingredients:
- hot cocoa mix (powder) - 3/4 cup
- flour - 1 1/2 cups
- sugar - 1/2 cup
- baking powder - 2 tsp
- salt - 1/2 tsp
- eggs - 2
- milk - 3/4 cup
- butter, melted, cooled - 1/2 cup
- vanilla extract - 1 1/2 tsp
- mini chocolate chips - 3/4 cup
- mini marshmallow, cut in half - 1/2 cup
Instructions:
In a bowl, combine cocoa, flour, sugar, baking powder and salt; set aside.
In a second bowl, whisk together eggs, milk, butter and vanilla. Fold egg mixture into flour mixture, just until blended. Fold chips into the batter. Spoon batter into 12 paper lined muffin cups.
Bake in a preheated 375 degree oven for 18 - 20 minutes or until toothpick inserted in center comes out clean. Remove from oven, top with marshmallows, (cut side down). Return to oven for 1 - 2 minutes to soften marshmallows. Cool on wire rack.
