Cinnamon Roll Bites
Ingredients:
- hot water, as hot as you can get from the tap, NOT boiling - 1 1/2 cup
- active dry yeast - 1 T
- sugar - 2 T
- salt - 1 tsp
- vegetable oil - 2 T
- bread flour - 3 1/2 - 4 cups
- sugar - 3/4 cup
- brown sugar - 1/4 cup
- cinnamon - 1 T
- salted butter, melted - 1/2 cup
- Icing --
- powdered sugar - 1 cup
- milk - 2 - 3 T
- butter, melted - 2 T
- vanilla extract - 1/2 tsp
Instructions:
In a small bowl, combine water, yeast and sugar and let sit for 5 minutes until frothy. Add salt and oil; mix well.
In a large bowl, yeast mixture and 2 cups of flour. Stir in remaining flour, 1/2 cup at a time, until dough starts to pull away from sides and is no longer sticky. Place dough on a floured work surface, knead until smooth and elastic.
Place dough in a greased bowl, cover with plastic wrap. Let rise for one hour, until doubled in size.
Punch dough down, knead on a floured surface until smooth again; set aside.
In a small bowl, combine sugars and cinnamon. Place butter in another small bowl. Tear off quarter size pieces of dough, roll into a ball. Dip the ball in butter, then roll it around in the sugar mixture; place on a greased cookie sheet. Repeat until all the dough is used.
Bake in a preheated 375 degree oven for 10 - 12 minutes.
Prepare icing -- in a bowl, mix together powdered sugar, milk, butter and vanilla until smooth. Drizzle icing over cinnamon bites. Serve warm.
