Coffee Cake Muffins
Ingredients:
- flour - 1 1/2 cups
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- salt - 1/2 tsp
- brown sugar - 1/4 cup
- sugar - 1/4 cup
- vegetable oil - 1/2 cup
- Silk Cashewmilk - 3/4 cup
- eggs - 2
- vanilla extract - 1/2 tp
- Topping --
- brown sugar - 1/4 cup
- sugar - 1/4 cup
- chopped pecans - 1/2 cup
- salt - 1/4 tsp
- flour - 1/2 cup
- vegetable oil - 1/4 cup
Instructions:
Prepare muffins -- in a bowl, mix together flour, baking powder, baking soda, salt, brown sugar and sugar..
Create a well in the dry ingredients, add cashew milk, eggs, vanilla and oil. Gently stir until the batter is smooth. Pour batter into 12 paper lined muffin cups.
Prepare topping -- in a bowl, mix together brown sugar, sugar, pecans, salt, flour and oil. Press 1 T of topping on the top of each muffin.
Bake in a preheated 375 degree oven for 16 - 20 minutes, or until the center of the muffins are set.
Cool slightly before removing from pan.
