Doughnut Muffins
Ingredients:
- butter, slightly soft - 1/4 cup
- vegetable oil - 1/4 cup
- sugar - 1/2 cup
- brown sugar - 1/3 cup
- eggs - 2
- baking powder - 1 1/2 t
- baking soda - 1/4 t
- ground nutmeg - 3/4 t
- cinnamon - 1 t
- salt - 3/4 t
- vanilla extract - 1 t
- flour - 2 2/3 cups
- milk - 1 cup
- butter, melted - 3 T
- powdered sugar - 1 cup
- vanilla extract - 3/4 t
- hot water - 2 T
Instructions:
In a bowl, beat together 1/4 cup butter, oil, sugar and brown sugar till smooth. Beat in eggs, one at a time. With mixer on low speed, add baking powder, baking soda, nutmeg, cinnamon, salt and 1 t vanilla just until combined. Stir flour into butter mixture alternately with milk, beginning and ending with flour, mix until just combined. DO NOT overmix.
Place 12 paper liners in a cupcake pan, divide batter equally. Bake in a preheated 425 degree oven for 15 - 17 minutes, until tops are pale golden and springy to the touch, rotate pan halfway through baking time. Cool for 5 minutes in the pan, remove and place on wire rack for 10 minutes then glaze.
Prepare glaze -- in a bowl, whisk together 3 T melted butter, powdered sugar, 3/4 t vanilla and hot water until smooth. Dip the tops of slightly cooled muffins into the glaze, allow glaze to harden, dip muffins in the glaze a second time, allow to harden.
