Filled Donuts
Ingredients:
- self rising flour - 2 1/2 cups
- vanilla yogurt - 16 ounces
- vanilla sugar - 2 T
- eggs, lightly beaten - 2
- canola oil - 6 cups
- powdered sugar - 3/4 cup
- seedless jelly, raspberry, strawberry, etc - 1 cup
Instructions:
In a bowl, combine flour, yogurt, vanilla sugar and eggs. Knead until ingredients are combined and a sticky, doughy batter is formed. Cover with a towel; let rest for 15 - 20 minutes.
Heat oil. Place a tablespoonful of batter in the oil. (Fry 5 - 6 at a time.) Turn donuts over when halfway browned, 30 - 60 seconds. Fry for another 2 - 3 minutes or until golden brown and cooked through. Remove donuts, place on paper towel lined plate. Repeat with remaining batter.
Fill a pastry bag or squeeze bottle with jelly, inject a little jelly into each donut. Roll each donut in powdered sugar. Yields 14
