Glazed Apple Fritters
Ingredients:
- flour - 1 cup
- baking powder - 1 1/2 t
- sugar - 3 T
- salt - 1/2 t
- egg, beaten - 1
- milk - 2/3 cup
- apple, diced - 1
- vegetable oil for frying -
- milk - 1/4 cup
- vanilla extract - 1 t
- powdered sugar - 2 cups
Instructions:
Measure and sift together flour, baking powder, sugar and salt. Beat eggs and 2/3 cup milk together; slowly incorporate dry ingredients. Fold in apples.
Pour at least 2 inches of oil in a heavy duty pan, heat oil over medium heat. Place a teaspoon full of batter into oil and fry until golden brown 3 - 4 minutes on each side. Remove from oil, drain on paper towel lined plate.
Prepare glaze -- in a saucepan, heat 1/4 cup milk and vanilla over low heat until warm. Sift powdered sugar into milk mixture. Whisk slowly, until well combined.
Remove glaze from heat and set over a bowl of warm water. Dip doughnuts in the glaze, place on a wire rack for glaze to set before serving.
