Glazed Streusel Muffins
Ingredients:
- milk - 1/4 cup
- canola oil - 1/4 cup
- eggs - 2
- cinnamon streusel muffin mix - 15.2 package
- ground cinnamon - 1/2 t
- crushed pineapple, in juice - 8 ounce can
- grated peeled granny smith apple - 3/4 cup
- shredded carrots - 3/4 cup
- toasted pecans, chopped - 3/4 cup
- raisins - 1/2 cup
- powdered sugar - 1 cup
- milk - 1 - 2 T
- vanilla - 1/2 t
Instructions:
Whisk together milk, oil and eggs; set aside. Remove streusel mix from package; set aside. Mix together muffin mix and cinnamon. Make a well in the center, add egg mixture, pineapple, apples, carrots, pecans and raisins; stir just until moistened. Coat the wells of muffin tins with cooking spray; fill wells 2/3 full, sprinkle streusel over top. Bake on the TOP rack in a preheated 425 degree oven for 18 - 23 minutes. Let muffins cool for 10 minutes then glaze. Prepare glaze -- mix together powdered sugar, milk and vanilla, spoon glaze over muffins. Yields 18 muffins.
