Peach Fritters
Ingredients:
- butter - 1 T
- brown sugar, divided - 2 1/2 T
- roughly chopped peaches, divided - 3 cups
- flour - 1/1/2 cups plus 3 T
- baking powder - 2 tsp
- salt - 1/2 tsp
- sugar - 2 tsp
- milk - 2/3 cup
- eggs - 2
- vanilla extract - 2 tsp
- canola oil - for frying
- Caramel sauce --
- butter - 4 T
- brown sugar - 1/2 cup packed
- heavy cream - 1/2 cup
- flakey sea salt - 1 tsp
Instructions:
Prepare fritters -- In a saute pan, over medium heat, melt butter. Add 1 1/2 T brown sugar; whisk together. Stir in half the peaches. Cook until sugar is dissolved and peaches are softened, (about 4 - 5 minutes.) Place in a bowl to cool.
In a bowl, whisk together, 1 T brown sugar, flour, baking powder, salt and sugar. In a second bowl, whisk together milk, eggs and vanilla.
Add milk mixture to flour mixture, whisk just until combined. Gently fold in cooled peaches (along with any juices and caramel that have accumulated) and raw peaches to batter. DO NOT over mix. Heat oil to 375 degrees.
Using a tablespoon, scoop batter into oil. Do not overcrowd. Fry until golden brown on all sides, about 3 minutes per side. (If fritters brown too fast, turn heat down a few degrees.) Drain on paper towels.
Prepare caramel sauce -- in a nonstick skillet, over medium heat, melt the butter and brown sugar. When butter melts and sugar has dissolved, stir in cream. Turn heat to low, stir until combined. Remove from heat, cool slightly before serving.
Drizzle fritters with caramel sauce, dust with powdered sugar and sprinkle sea salt over top. Serve.
