Pecan Pie Muffins
Ingredients:
- packed brown sugar - 1 cup
- flour - 1/2 cups
- chopped pecans - 2 cups
- butter, melted, cooled - 1/2 cup
- eggs, lightly beaten - 2
Instructions:
In a bowl, combine brown sugar, flour and pecans. In separate bowl, combine melted butter and eggs; mix well. Add butter mixture to flour mixture; stir just until moist.
Pour mixture into WELL greased and flour non stick mini muffin pans.
Bake in preheated 350 degree oven for 12 - 13 minutes or until a toothpick inserted near the center comes out clean. Outside should be golden brown.
Remove from pan immediately and place on wire rack to cool. Yield 18 mini muffins.
