Pistachio Almond Mini Donuts
Ingredients:
- cake flour - 1 1/4 c
- sugar - 3/4 c
- baking powder - 1 1/4 t
- salt - 1/4 t
- almond extract - 1 T
- egg, lightly beaten - 1
- milk - 1/2 c
- butter, melted - 2 1/2 T
- powdered sugar - 1 c
- Jell-O pistachio instant pudding - 2 T
- milk - 3 T
- almonds, chopped - 1/2 c
Instructions:
Sift together flour, sugar, baking powder and salt. Stir in almond, egg, buttermilk and butter until just mixed. DO NOT over mix.
Pipe batter into a greased donut pan. Bake in preheated 425 degree oven for 4 - 5 minutes. Let cool before removing from pan.
Prepare glaze-- In a bowl combine powdered sugar, pudding and milk; stir until a glaze forms. Dip donuts in glaze and top with almonds.
